- 8 ounces ground Chorizo mild to spicy, your call
- ½ small onion chopped
- 1 medium tomato chopped
- 1 small roasted poblano pepper chopped
- 8 ounces melting cheese (like Oaxaca or Chihuahua) cubed
- Fresh cilantro chopped
- Tortilla chips for serving
Preheat the oven to 375°F. You’ll need a cast-iron skillet or other oven-safe dish.
In the skillet over medium-high heat, brown the chorizo, breaking it up with a spatula as it cooks.
Add the onion and saute for 3-4 minutes.
Add the tomato and pepper. Stir and simmer for 1-2 minutes.
In your cast-iron skillet or baking dish, layer half the cheese on the bottom. Then add the chorizo mixture. Top with the remaining cheese.
Bake for 10 minutes, until the cheese is melted and bubbly around the edges.
Garnish with cilantro. Serve with tortilla chips.
