Ingredients

  • 8 ounces ground Chorizo mild to spicy, your call
  • ½ small onion chopped
  • 1 medium tomato chopped
  • 1 small roasted poblano pepper chopped
  • 8 ounces melting cheese (like Oaxaca or Chihuahua) cubed
  • Fresh cilantro chopped
  • Tortilla chips for serving

Instructions

  • Preheat the oven to 375°F. You’ll need a cast-iron skillet or other oven-safe dish.
  • In the skillet over medium-high heat, brown the chorizo, breaking it up with a spatula as it cooks.
  • Add the onion and saute for 3-4 minutes.
  • Add the tomato and pepper. Stir and simmer for 1-2 minutes.
  • In your cast-iron skillet or baking dish, layer half the cheese on the bottom. Then add the chorizo mixture. Top with the remaining cheese.
  • Bake for 10 minutes, until the cheese is melted and bubbly around the edges.
  • Garnish with cilantro. Serve with tortilla chips.
