Ingredients

  • 2 pounds boneless skinless chicken thighs
  • Salt and pepper for seasoning
  • 1/3 cup bourbon whiskey, apple juice, or chicken broth
  • 1/2 cup brown sugar
  • 1/2 cup low sodium soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon cornstarch + 1 tbsp cold water
  • 2 cups cooked rice for serving
  • 2 green onion chopped, for garnish

Instructions

  • Season the chicken with salt and pepper on both sides. Place them in the crockpot.
  • In a bowl, combine the bourbon, brown sugar, soy sauce, and garlic. Stir well to combine. Pour over the chicken.
  • Cover with the lid and cook on low for 4 hours or high for 3 hours.
  • About 30 minutes before the cooking time is up, mix together the cornstarch and water in a small bowl, then pour it into the sauce in the crock pot. As you stir it in, the sauce will thicken. Break the chicken up into smaller chunks with a fork or tongs. Continue cooking until the time is up.
  • Serve over rice. Garnish with green onions.
