Pesto Turkey Pinwheels
Ingredients
- 3/4 cup basil leaves
- 2 tablespoons pine nuts
- ¼ cup Parmesan
- 1 clove garlic
- 2 tablespoons olive oil (more if needed)
- 1/4 teaspoon salt to taste
- 2 ounces cream cheese softened
- 6 slices oven roasted turkey breast
- 4 slices deli provolone
- 2 large flour tortillas
Instructions
- In a food processor or mini chopper, combine the basil, pine nuts, parmesan, garlic, olive oil and salt. Pulse until fully combined.
- Add the cream cheese to the pesto and stir until fully combined.
- Spread half the cream cheese mixture onto each tortilla, leaving a ½” space around the edges.
- Lay 2 slices of turkey and 2 slices of cheese over the tortillas, evenly.
- Roll tightly. To make them easier to cut, wrap in plastic wrap and refrigerate for 30 minutes.
- Slice and serve.
