Pesto Turkey Pinwheels

Soft tortillas are layered with creamy pesto, sliced turkey, and cheese, then rolled up and sliced into bite-sized spirals that are perfect for sharing.

Ingredients

  • 3/4 cup basil leaves
  • 2 tablespoons pine nuts
  • ¼ cup Parmesan
  • 1 clove garlic
  • 2 tablespoons olive oil (more if needed)
  • 1/4 teaspoon salt to taste
  • 2 ounces cream cheese softened
  • 6 slices oven roasted turkey breast
  • 4 slices deli provolone
  • 2 large flour tortillas

Instructions

  • In a food processor or mini chopper, combine the basil, pine nuts, parmesan, garlic, olive oil and salt. Pulse until fully combined.
  • Add the cream cheese to the pesto and stir until fully combined.
  • Spread half the cream cheese mixture onto each tortilla, leaving a ½” space around the edges.
  • Lay 2 slices of turkey and 2 slices of cheese over the tortillas, evenly.
  • Roll tightly. To make them easier to cut, wrap in plastic wrap and refrigerate for 30 minutes.
  • Slice and serve.
