Ingredients
- 8 ounces (227 g) spaghetti
- 3 tablespoons (42 g) salted butter
- 3 tablespoons (44 ml) high-quality Extra Virgin olive oil
- 2 cloves garlic chopped
- 2 tablespoons (30 ml) fresh lemon juice
- Zest of that lemon
- 1/2 cup (50 g) fresh Parmesan cheese grated (plus more for garnish)
- 1/4 cup (15 g) fresh parsley chopped
- 1/2 teaspoon (3 g) salt I prefer flake salt
- 1/2 teaspoon (1 g) ground black pepper
Instructions
- Cook the spaghetti according to the package directions. Before draining your pasta, save a cup of the starchy cooking water. Drain the rest and set aside.
- In a large sauté pan over medium heat, add the salted butter and olive oil. When the butter has melted and begins to foam, add the garlic. Stir for 30 seconds.
