Grilled Chicken Pita with Tzatziki
Ingredients
- 1 tablespoon (15 ml) olive oil
- 1/2 teaspoon (1 g) dried oregano
- 1/2 teaspoon (1.5 g) garlic powder
- 1/2 teaspoon (1 g) paprika
- 1 1/2 tablespoons (22 ml) lemon juice divided
- 4 chicken thighs boneless, skinless
- 3/4 cup (150 g) Greek yogurt 6 ounces
- 1/4 cup (33 g) cucumber grated, excess water squeezed out
- 1 garlic clove minced
- 1/2 tablespoon (0.2 g) fresh dill chopped (or 1 teaspoon dried dill)
- salt and pepper to taste
- 4 pitas
- 1 tomato sliced
- 1 small red onion thinly sliced
- 1 cup (72 g) shredded lettuce
Instructions
- In a bowl, combine olive oil, oregano, garlic powder, paprika, and 2 teaspoons lemon juice. Add chicken and coat well. Let marinate for at least 20 minutes (or up to 2 hours in the fridge).
- In a bowl, mix Greek yogurt, grated cucumber, garlic, dill, remaining lemon juice, salt, and pepper. Stir well and refrigerate until ready to use.
- Preheat grill or grill pan over medium-high heat. Grill chicken for about 5-7 minutes per side, to 165°F(75°C). Let rest for a few minutes, then slice into strips.
- Lightly warm the pita bread on the grill or in a pan. Add tomatoes, onions, lettuce, and chicken. Top with generous amount of tzatziki.
- Fold the sides in and wrap with paper to hold it all together.
