French onion soup bites

Why make a whole pot of soup when you can serve it in bite-sized form? These little cups are loaded with the best parts of the soup: the sweet onions, the gooey cheese, and a crisp shell that adds a satisfying crunch. They’re elegant enough for entertaining, but simple enough to whip up on a weeknight.

Helpful Tips

  • Caramelize the onions slowly: Don’t rush this step. Low and slow is the key to achieving deep, sweet flavor.
  • Use good-quality Gruyere: It melts beautifully and adds a nutty richness that pairs perfectly with the onions.
  • Bake just before serving: These are best served warm right out of the oven, so time your baking accordingly.
