Grilled Corn & Steak Salad
Ingredients
- 1 pound (454 g) sirloin or ribeye steak
- 2 teaspoons (4 g) steak seasoning your choice
- 2 ears of corn husked
- 1 tablespoon (15 ml) olive oil
- salt and pepper to taste
- 4 cups (160 g) mixed greens arugula, spinach, or your favorite mix
- 1 cup (149 g) cherry tomatoes halved
- 1 small red onion thickly sliced and quartered
- 1/2 cup (68 g) blue cheese crumbled
- Champagne vinaigrette homemade or store-bought – I prefer Girards
Instructions
- Pat dry and season the steak on all sides with steak seasoning (or a simple mix of garlic powder, paprika, salt, and pepper).
- Rub the corn cobs with olive oil, season with salt and pepper.
- Preheat grill or grill pan over medium-high heat. Grill corn, onion, and steak for about 4 minutes per side. Steak should reach 135°F(55°C) (for medium rare). Let rest for 5 minutes, then slice into strips.
- Once the corn cools, remove the kernels from the cob.
- Arrange the greens in bowls, top with tomatoes, red onion, steak, corn, cheese, and drizzle on the dressing.
