- 1 pound sirloin or ribeye steak
- 2 teaspoons steak seasoning your choice
- 2 ears of corn husked
- 1 tablespoon olive oil
- salt and pepper to taste
- 4 cups mixed greens arugula, spinach, or your favorite mix
- 1 cup cherry tomatoes halved
- 1 small red onion thickly sliced and quartered
- 1/2 cup blue cheese crumbled
- Champagne vinaigrette homemade or store-bought - I prefer Girards
Pat dry and season the steak on all sides with steak seasoning (or a simple mix of garlic powder, paprika, salt, and pepper).
Rub the corn cobs with olive oil, season with salt and pepper.
Preheat grill or grill pan over medium-high heat. Grill corn, onion, and steak for about 4 minutes per side. Steak should reach 135°F(55°C) (for medium rare). Let rest for 5 minutes, then slice into strips.
Once the corn cools, remove the kernels from the cob.
Arrange the greens in bowls, top with tomatoes, red onion, steak, corn, cheese, and drizzle on the dressing.
