Marinated Mozzarella Balls
Ingredients
- 2 tablespoons fresh parsley and/or basil leaves chopped
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 garlic clove grated
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 2/3 cup extra-virgin olive oil
- 8 ounces Ciliegine fresh mozzarella cheese balls drained and patted dry
Instructions
- In an 8-ounce jar, combine the herbs, lemon juice, lemon zest, garlic, red pepper flakes, salt, and 1/3 cup of the olive oil.
- Add the mozzarella balls and stir. Then pour in the rest of the olive oil. Add more if it doesn’t cover the mozzarella.
- Put on the lid and refrigerate for at least one hour before serving. It can be stored in the refrigerator for up to 1 week.
