- 2 tablespoons fresh parsley and/or basil leaves chopped
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 garlic clove grated
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 2/3 cup extra-virgin olive oil
- 8 ounces Ciliegine fresh mozzarella cheese balls drained and patted dry
In an 8-ounce jar, combine the herbs, lemon juice, lemon zest, garlic, red pepper flakes, salt, and 1/3 cup of the olive oil.
Add the mozzarella balls and stir. Then pour in the rest of the olive oil. Add more if it doesn’t cover the mozzarella.
Put on the lid and refrigerate for at least one hour before serving. It can be stored in the refrigerator for up to 1 week.
