Ingredients

  • 15 phyllo shells 1 box
  • 2 medium red potatoes
  • 2 ounces cheddar cheese shredded
  • 2 tablespoons cream cheese softened
  • 1/2 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 3 strips of bacon cooked and chopped
  • 1/4 cup sour cream
  • fresh chives chopped

Instructions

  • Preheat the oven to 350° F(190°C). Place the phyllo shells on a baking sheet and set aside.
  • Peel the potatoes and cut them into cubes. Cook in a pot of boiling salted water for 20 minutes or until fork tender. Drain. Once cooled, transfer them to a mixing bowl.
  • Add the cheddar, cream cheese, butter, slat, garlic powder, and half the bacon to the bowl. Stir, mashing up the potato as you mix. It doesn’t need to be smooth. Divide the potato mixture among the phyllo cups. Bake for 15 minutes.
  • Top with the remaining bacon bits, sour cream, and chives.
