ground beef casserole

You should definitely make this casserole if you’re craving something filling and flavorful without a ton of effort. This is a great way to use ground beef, and the from-scratch creamy sauce is worth the few extra minutes. It bakes up golden and bubbly, and it’s the kind of dish that always gets asked for again.

Helpful Tips

  • Slice the potatoes evenly so they cook and bake at the same rate. Red potatoes hold their shape nicely.
  • Shred your cheese fresh from the block for the best melting texture. Pre-shredded cheese often has additives that can make the sauce grainy.
  • Let it rest a few minutes before serving so the sauce thickens slightly and everything holds together better.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes peeled and sliced into ¼ inch pieces
  • 1 small onion chopped
  • 1 clove garlic chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • ½ teaspoon EACH salt and pepper
  • ¾ cup cheddar cheese shredded

Instructions

  • Peel and slice the potatoes.
  • Preheat the oven to 350°F. Lightly grease an 8×8” casserole dish.

  • In the same skillet, melt the butter. Whisk in the flour. Cook that for a minute to get the raw flour taste out, then whisk in the milk, salt and pepper.
  • Layer half the potatoes, half the meat, half the sauce, and half the cheese. Repeat the layers.
  • Cover with aluminum foil and bake for 1 hour. Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is bubbly.
