Grilled brats and toppings bar

You’ll love this build-your-own brat bar because it keeps things simple while letting everyone customize their own creation. No two brats have to be the same. Whether you’re into smoky chipotle mayo or grilled onions and mustard, there’s something for every kind of craving.

Helpful Tips

  • Use two heat zones on the grill: Start the brats over medium heat to get a nice sear, then move them to medium-low to finish cooking through.
  • Toast the buns: Give the buns a quick toast on indirect heat or a top rack for a bit of crunch and to keep them from getting soggy.
  • Prep toppings ahead: Have all your toppings chopped, poured, and ready before the brats come off the grill so you can eat them hot.

Ingredients

  • 4 brats
  • 4 brat-sized buns
  • Toppings:
  • BBQ sauce, pickled red onion, cilantro, and crushed chips
  • Peppers, onions, and chipotle mayo
  • Pickles, tomatoes, and mustard
  • Chipotle coleslaw, corn, and jalapenos

Instructions

  • Prepare your toppings, so they are ready when the brats are hot.
  • Heat the grill to medium heat. It’s good to have 2 zones of heat, one on medium, one medium low. When ready, put the brats on and let them cook for a few minutes over medium heat to get browned. Then move them to medium low heat to continue cooking.
  • Meanwhile, you can lightly toast the buns on a top rack or on indirect heat on the grill.
  • When they reach 165° F(75°C), they’re done. Take them off and let them rest.
  • Serve hot, with condiments and toppings.
