Butternut Squash & Sausage Pizza

Ingredients

For the sauce:

  • 1/2 tablespoon butter
  • 1/2 tablespoon all-purpose flour
  • 1/3 cup milk
  • 1 teaspoon fresh rosemary chopped, divided
  • 1/2 teaspoon salt
  • 1/4 cup Parmesan cheese freshly grated
  • 2 teaspoons lemon juice freshly squeezed

For the topping:

  • 1 cup butternut squash chopped into small cubes
  • 4 ounces Italian sausage
  • 1/2 small white onion chopped
  • 3/4 cup mozzarella cheese shredded

Instructions

  • Pre-heat the oven to 450° F.

For the dough:

  • Using your hands, form the pizza dough into a round or oblong shape. Place it on a pizza stone.

For the sauce:

  • Add the butter to a small saucepan and melt over medium heat.
  • Once melted and sizzling, add the flour and whisk together. Allow to cook for 3 minutes.
  • Add the milk, half the rosemary, and salt. Whisk rapidly to combine and avoid lumps.
  • Remove from the heat and add Parmesan cheese and lemon juice. Whisk to combine. Set aside.

For the topping:

  • Add the sausage to a medium-sized skillet over medium-high heat and cook until browned, breaking the pieces up into small bits with a spatula.
  • Add the butternut squash and onion to the pan and stir to combine. Continue to cook over medium heat for an additional 7-8 minutes, until the squash is tender. Remove from heat.

To assemble the pizza:

  • Spread as much of the sauce onto the dough as desired. Add the butternut squash and sausage topping and sprinkle on the mozzarella cheese and dried rosemary.
  • Bake in the oven for 8-10 minutes. Check the crust. Cook an additional 2-3 minutes, if necessary.
