Grilled Veggies with Creamy Dill Sauce is a fresh, colorful side dish that works with just about any summer meal. It’s loaded with smoky, caramelized vegetables and topped with a tangy, herby dill sauce that makes everything pop. It looks impressive on a platter but takes barely any effort to make.

This is one of those go-to recipes for grilling season. The veggies cook fast and get a nice char without losing their crunch. The dill sauce comes together in minutes and adds a creamy contrast to the grill-kissed veggies. You can serve it alongside grilled meats, toss it with grains for a salad, or just eat it as is.
Helpful Tips
- Cut evenly. Try to slice the vegetables to a similar size so they grill at the same rate.
- Don’t skip the chill time. Letting the sauce sit helps the flavors develop.
- Switch it up. Add mushrooms, eggplant, or corn to mix things up based on what you have.
