Ingredients
For the scallion sauce:
- 4 stalks green onion finely chopped, white and green parts
- 1/4 cup neutral oil canola, grapeseed, or vegetable
- 1 tablespoon soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper optional
For the chicken dish:
- 1 cup rotisserie chicken shredded
- 1 cup leftover rice reheated
- 4 scallions chopped
- 1/2 teaspoon EACH salt and pepper
- 2 tablespoons Scallion sauce (see recipe)
- 2 teaspoons golden shallot oil or sesame oil
Instructions
- Before starting, make the scallion sauce. Heat the oil in a wok or saucepan over medium heat. Add the white parts of the scallions. Fry slowly until they are aromatic and the white parts are lightly browned.
- Add the green parts of the scallions, soy sauce, dark soy sauce, sugar, salt, and white pepper to the pan.

- Remove from heat and allow the sauce to cool before transferring to an airtight container. You will only use 2-3 tablespoons of the sauce for this recipe.

Notes
- In the scallion sauce, you can use 2 tablespoons of regular soy sauce if you don’t have dark soy sauce on hand. The dark soy sauce just gives it more depth and flavor.
