- 28 ounces frozen tater tots
- 1/2 pound lean ground beef
- 1/2 packet taco seasoning
- 1 can black beans drained and rinsed
- 1 cup cheddar cheese shredded
- Toppings: cherry tomatoes avocado, jalapeno, cilantro, sour cream, olives, green onions
Cover a baking sheet with parchment paper. Spread the tots on the baking sheet and cook according to the package instructions.
Cook the ground beef in a skillet, crumbling it as it cooks, until browned. Drain any excess grease. Add half a packet of taco seasoning and 1/4 cup of water. Stir and simmer for 2-3 minutes.
Sprinkle the ground beef and black beans over the tots, then sprinkle on the shredded cheese. I like to layer it up so each bite gets toppings.
Bake until the cheese is melted, but not browned, about 5 minutes.
Remove from the oven and serve with your toppings.
