- 12 tortillas flour and/or corn
- 1 pound chicken breasts cubed
- 2 tablespoons taco seasoning
- 1 can black beans
- 1 can corn
- 1 can refried beans
- 1 cup pico de gallo
- 1 cup guacamole
- 1 cup salsa
- 1 cup shredded cheese
- 1/2 red onion chopped
- 1/2 cup sour cream
- 1 cup lettuce shredded
- 2 avocados sliced
- 2 jalapenos sliced
- 1/2 cup sliced olives
- 1/2 cup cilantro chopped
Add chicken to frying pan over medium heat and cook until browned. Add the taco seasoning and stir to coat the chicken. Transfer to a serving bowl.
Heat the black beans, corn and refried beans and add to separate serving bowls. Warm the tortillas before adding to the board. All other ingredients can be served cold.
- This board will comfortably serve 6 people with no leftovers, which is fine when serving at your dinner table.
- As a party board, we recommend doubling the portions for 6-8 people.
- You can use homemade or store bought taco seasoning. If using store bought, follow the instructions on the package.
