- 20-30 frozen tater tots
- 1/3 cup cheddar cheese shredded
- 1/4 cup sour cream
- 2 slices bacon cooked and crumbled
- Chives sliced
Preheat the oven to 450ºF (230ºC). Grease the cups of a mini muffin pan.
Place 2-3 tots in each muffin cup.
Bake for 10 minutes. Remove the pan from the oven and let cool slightly.
Mold the tots into cups inside the tray. You can do this by pressing a small flat object into the tray and twisting to force the tots up the sides. Return to oven; bake for 15 more minutes.
Add cheese to each potato cup. Bake for 2-3 minutes, until the cheese has melted. Transfer to a serving platter. Top with sour cream, bacon bits, and chives.
- Press the tots down firmly into each muffin cup to create a stable base that can hold the toppings. A small round tool, like the end of a kitchen utensil, my muddling tool works well for this.
- Mix things up by adding toppings like jalapeños, diced tomatoes, or even a drizzle of hot sauce to customize these bites to your taste.
- These tater tot cups are best enjoyed warm, straight from the oven, so the cheese is melty and the tots are nice and crispy.
