- 3 medium onions sliced thickly (Walla Walla Sweets, if possible)
- salt and pepper for seasoning
- 1 cup mayonnaise
- 3 tablespoons white vinegar
- 1 tablespoon stone ground mustard
- 2 teaspoons horseradish
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- wooden or metal skewers
Preheat the grill to medium high heat. Grease the grates so things don’t stick.
Skewer the onions, three per skewer, if possible. Season with salt and pepper.
Mix all other ingredients in a bowl until combined.
Place the onion skewers on the grill and cook for 4-5 minutes per side, until nicely charred.
Brush the sauce onto the onions while grilling. Then use as a dip or drizzle, as desired.
