- 1 box Jiffy cornbread mix
- 1 egg
- 1/2 cup sour cream
- 1/4 cup salted butter melted
- 2 tablespoons milk
- 4 ounce green chilies
- 1/2 cup cheddar cheese shredded
Preheat your oven to 400°F (200°C). Grease an 8x8” baking dish.
In a large mixing bowl, whisk together the cornbread mix, egg, mayonnaise, melted butter, and milk, just until incorporated. Do not overmix, or the cornbread will become tough. It’s okay if it’s a little lumpy.
Add the green chiles and shredded cheddar cheese. Fold in until combined.
Pour the batter into the greased baking dish. Bake for 20 to 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let cool for 10 minutes, then slice and serve warm with butter and honey.
