- 1/2 pound ground beef
- 1/2 packet taco seasoning
- 12 street taco flour tortillas
- 1 can refried beans
- 1 cup cooked rice
- 1 cup cheddar shredded
- 1 cup salsa
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat a pan over medium heat and cook the ground beef until browned. Add the taco seasoning and water (see packet for instructions) and stir until well combined.
Heat the flour tortillas until they are pliable.
Spread the refried beans onto each tortillas, then top with rice, cheese, and ground beef. Be careful not to overstuff. Fold in the sides of the tortilla and roll tightly. You can secure the edges with refried beans, if you want, to hold them together better.
Place the mini burritos, seam side down, on the baking sheet. Bake for 10-12 minutes.
Serve with salsa on the side.
- Choose soft, small tortillas to keep the mini burritos bite-sized and easy to handle. Flour or corn tortillas both work well.
- Make sure to warm up the tortillas before you roll them. They are less likely to crack.
- To make assembly quick and easy, prepare your fillings ahead of time so you can wrap and bake without stress.
- After rolling the mini burritos, bake them seam side down in the oven for a few minutes to achieve a crispy, golden texture on the outside while keeping the inside warm and flavorful.
