- 1 head broccoli about 1 pound, cut into florets
- 1/2 cup bread cubed
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/4 cup Parmesan cheese shaved
- 4 lemon wedges for serving
For the dressing
- 1/4 cup mayonnaise
- 1 teaspoon fresh lemon juice
- 1 small clove garlic minced
- 2 teaspoons Parmesan cheese finely grated
- 1/4 teaspoon Dijon mustard
- 1/4 teaspoon Worcestershire
- 1/4 teaspoon anchovy paste or 2 anchovies, minced
In a large bowl, mix the broccoli with half the olive oil and half the seasonings.
Pour it into the air fryer basket.
Air fry at 380°F (190°C) for 6 minutes, shaking halfway through.
When done, return the broccoli to the bowl and let cool.
Mix the breadcrumbs with the remaining olive oil and seasonings. Pour it into the air fryer basket.
Air fry at 380°F (190°C) for 3 minutes. When done, add the breadcrumbs to the bowl with the broccoli.
In a small bowl, whisk together the dressing ingredients.
Add the dressing to the broccoli bowl and toss to coat.
Transfer salad to a serving platter. Top with Parmesan cheese. Serve with a lemon wedge.
