Air Fryer Roasted Broccoli Caesar Salad

This Broccoli Caesar Salad has all the flavors and delights of a traditional Caesar, only with roasted broccoli.

Ingredients

  • 1 head broccoli about 1 pound, cut into florets
  • 1/2 cup bread cubed
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup Parmesan cheese shaved
  • 4 lemon wedges for serving

For the dressing

  • 1/4 cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1 small clove garlic minced
  • 2 teaspoons Parmesan cheese finely grated
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon Worcestershire
  • 1/4 teaspoon anchovy paste or 2 anchovies, minced

Instructions

  • In a large bowl, mix the broccoli with half the olive oil and half the seasonings.
  • Pour it into the air fryer basket.
  • Air fry at 380°F (190°C) for 6 minutes, shaking halfway through.
  • When done, return the broccoli to the bowl and let cool.
  • Mix the breadcrumbs with the remaining olive oil and seasonings. Pour it into the air fryer basket.
  • Air fry at 380°F (190°C) for 3 minutes. When done, add the breadcrumbs to the bowl with the broccoli.
  • In a small bowl, whisk together the dressing ingredients.
  • Add the dressing to the broccoli bowl and toss to coat.
  • Transfer salad to a serving platter. Top with Parmesan cheese. Serve with a lemon wedge.
