- 1 seedless watermelon cut into 1 to 1½ inch thick slices
- 1 cup strawberries hulled and sliced
- 1 cup blueberries
- 1 cup purple grapes halved
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- ¼ cup crumbled feta cheese
- Fresh mint leaves thinly sliced, optional
Lay a round slice of watermelon flat on a cutting board or serving platter. Pat the top gently with paper towels to remove excess moisture. Cut it into 4 pieces. Place it on a serving plate. Continue with remaining slices.
In a small bowl, whisk together the honey, lemon juice, and lemon zest.
In a separate bowl, gently toss the strawberries, blueberries, and kiwi with the lemon glaze until lightly coated.
