Ingredients

  • 1 seedless watermelon cut into 1 to 1½ inch thick slices
  • 1 cup strawberries hulled and sliced
  • 1 cup blueberries
  • 1 cup purple grapes halved
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • ¼ cup crumbled feta cheese
  • Fresh mint leaves thinly sliced, optional

Instructions

  • Lay a round slice of watermelon flat on a cutting board or serving platter. Pat the top gently with paper towels to remove excess moisture. Cut it into 4 pieces. Place it on a serving plate. Continue with remaining slices.
  • In a small bowl, whisk together the honey, lemon juice, and lemon zest.
  • In a separate bowl, gently toss the strawberries, blueberries, and kiwi with the lemon glaze until lightly coated.
  • Spoon the glazed fruit evenly over the watermelon slice, spreading it out like pizza toppings.
  • Sprinkle crumbled feta over the top and finish with fresh mint if using.
  • Slice into wedges and serve immediately.
