Ingredients

  • 1 ground beef
  • 1 small red bell pepper diced
  • 1 small onion diced
  • 4 cloves garlic minced (use one in meat and one in butter sauce)
  • 1 tbsp paprika
  • 2 teaspoons cumin
  • 2 teaspoons sumac
  • 2 teaspoons EACH salt and black pepper
  • 1/4 cup parsley or cilantro chopped (save some for the butter sauce)
  • 6 fajita-size flour tortillas
  • 1/4 cup butter melted

For the sauce

  • 1/2 cup Greek yogurt or mayonnaise
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon chipotle powder

Instructions

  • In a large bowl, add ground beef, bell pepper, onion, 2 cloves of the garlic, paprika, cumin, pepper, and salt and parsley. Mix until fully combined.
  • Slice the rounded ends off each tortilla to make a square. Spread a thin, even layer of the beef mixture onto the tops of the tortillas and stack them up.
  • Slice the stack into 4 even strips. Turn the stack. Run 4 skewers through the stack evenly, lengthwise.
  • Cut between the skewers to make 4 rows of kabobs.
  • Mix together the melted butter, 1 clove of the minced garlic, and a little chopped cilantro or parsley.
  • Grill the kabobs on all sides over medium-high heat until the beef is fully cooked and the tortillas are crispy and golden. Baste them with the garlic butter as they cook.
  • For the sauce, mix the Greek yogurt or mayonnaise, lemon juice and chipotle powder until smooth.
