Stuffed Turkey Rolls

Ingredients

  • 5 ounce boxed stuffing mix + water & butter per package instructions
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 8 slices oven-roasted turkey breast
  • 2 tablespoons fresh parsley chopped

Instructions

  • Prepare stuffing mix according to package directions.
  • In a saucepan, melt the butter and add the flour. Whisk together and cook for 1 minute. On medium low heat, add the broth, while whisking constantly to smooth it out. Season with salt and pepper. Cook on low heat until turkey rolls are ready.
  • Preheat the oven to 350°F. Prepare a 9 x 13 baking dish with non-stick cooking spray.
  • Spoon ¼ cup of stuffing onto each slice of turkey. Roll up and place seam side down in the greased 9 x 13 baking pan. Repeat with all the remaining turkey slices.
  • Pour half of the gravy over the turkey rolls.
  • Cover tightly with foil and bake for 30 minutes, or until hot and bubbly.
  • When ready, serve the turkey garnished with parsley, with remaining gravy on the side.
