Small-Batch Chocolate Chip Cookies

This recipe is for a quick and easy small batch of chocolate chip cookies - it makes just six cookies without a mixer. Just combine the ingredients in a bowl and bake.

Ingredients

  • 4 tablespoons butter melted, but not hot (60g)
  • 1/4 cup granulated sugar (55g)
  • 2 tablespoons brown sugar lightly packed (20g)
  • 1 large egg yolk
  • 3/4 teaspoon pure vanilla extract
  • 1/2 cup all purpose flour (25g)
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup dark or milk chocolate chips (70g)

Instructions

  • Preheat oven to 350°F.
  • In a small mixing bowl, whisk butter and both sugars until well combined.
  • Add the egg yolk and vanilla, whisking again to combine.
  • Add the flour to the bowl. Sprinkle the baking soda and salt over the top. Using a rubber spatula, stir until combined. Stir in the chocolate chips.
  • Scoop the dough into 6 balls and space them evenly on a baking sheet. Bake for 8 minutes, until the edges begin to brown. The center of the cookie should still be slightly soft. Allow the cookies to cool and firm up before moving to a cooling rack.
