Roasted Ranch Cauliflower Bites
Ranch Cauliflower Bites are roasted until golden and tossed with bold ranch seasoning, they come out crispy on the edges and tender in the center, with plenty of flavor in every bite.

- 1 head cauliflower large, cut into florets
- 1/4 cup olive oil
- 1 packet dry Ranch seasoning mix
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon EACH salt and black pepper
- 1/2 cup parmesan cheese grated
- 1/2 cup Greek yogurt
Preheat the oven to 425° F(220°C).
Put the cauliflower florets in a large bowl. Drizzle on the olive oil and toss to coat the cauliflower evenly.
In a small bowl, mix together half of the Ranch packet, the paprika, garlic powder, salt and pepper. Sprinkle the mixture over the cauliflower and toss to coat.
Add in the parmesan and toss to coat.
Roast in the oven for 25 minutes, then flip and continue cooking for 10 more minutes, until the cauliflower starts to get a little browned.
Mix the Greek yogurt with the remaining Ranch mix. Serve for dipping on the side.
