- 1 pound boneless skinless chicken breast or thighs cut into 1-inch pieces
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 tablespoon tamarind paste
- 1 tablespoon peanut butter
- 1 teaspoon grated garlic
- 1 teaspoon grated ginger
- 1 tablespoon vegetable oil
For the toppings:
- 2 tablespoons crushed peanuts
- red chilies sliced
- fresh cilantro chopped
- lime wedges
Make the marinade. In a bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, tamarind paste, peanut butter, garlic, ginger, and vegetable oil until smooth.
Marinate the chicken. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Assemble the skewers. Thread the marinated chicken onto skewers, leaving a little space between pieces so they cook evenly.
Grill the skewers. Heat a grill or grill pan over medium high heat. Cook the skewers for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
Finish and serve. Transfer to a platter and sprinkle with crushed peanuts, red chilies, and cilantro. Serve with lime wedges on the side.
