In a small saucepan, combine the egg yolks, corn syrup, and sugar. Whisk until the sugar is fully blended in.
Add the heavy cream, milk, and vanilla extract to saucepan. Stir to combine.
Place the saucepan on the stove top on medium heat. Cook, stirring constantly, until the mixture reaches 165°F–175°F on an instant-read thermometer. It is important not to exceed 175°F or the eggs will cook.
Remove from heat and pour it into the CREAMi pint jar.
Make an ice bath and place the pint jar in it to cool. Once fully cooled, put the lid on and freeze for 24 hours.
When ready to churn, remove the pint jar from the freezer, remove the lid, and secure it into the CREAMi machine.
Select gelato and press start.
When done, you can add mix-ins or remove and serve immediately or store in the pint jar in the freezer for later.
