- 1 cup brewed espresso or strong coffee cooled
- 2 tablespoons coffee liqueur optional
- 8 ounces mascarpone cheese softened
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 12 ladyfingers halved
- unsweetened cocoa powder, chocolate shavings for garnish
Combine the espresso and liqueur (if using).
In a mixing bowl, whip the heavy cream to soft peaks.
In a separate bowl, beat the mascarpone, sugar and vanilla until smooth.
Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.
Fill 1/3 of the cup with the mixture.
Dip two halves of ladyfingers in the coffee, then set them on top of the mixture in the cup.
Repeat the layers once more. Refrigerate for at least 4 hours.
Serve chilled, garnished with cocoa powder and chocolate shavings.
