- 2 ears of corn on the cob
- 1/4 cup mayonnaise
- Juice from 1/2 lime plus zest of that lime
- 2 green onions chopped
- 1 jalapeno diced
- 1/4 teaspoon chili powder mild to hot
- 1/4 teaspoon salt
For garnish:
- 1/4 cup Cotija cheese
- 1/4 cup cilantro minced
- 1 lime cut into wedges
- Tajin
Grill corn to add char, if desired.
Combine the corn, mayonnaise, lime juice, lime zest, green onions, jalapeno, chili powder, and salt in a bowl.
Refrigerate until chilled.
Garnish with Cotija cheese, cilantro, lime wedges, and Tajin. Serve cold.
- Mix it all up and store in the refrigerator until ready to serve.
- Leave the seeds and membrane of the jalapeno in if you like a lot of heat. Remove it all together if you want a more mild flavor.
- If using a can of corn, you can char it by putting it in the oven on a baking sheet. Bake at 400° F(205°C) for 20-30 minutes stirring every 10 minutes until the desired amount of char is achieved.
