- 1 pound baby potatoes unpeeled
- 1 tablespoon extra virgin olive oil
- 1 clove garlic minced
- 1/2 teaspoon salt
- Optional: paprika, or Lawry's seasoned salt, and red pepper flakes
Wash the potatoes and cut them into uniform chunks. Add the potatoes, olive oil, garlic, and salt to the crock pot. Stir to coat.
Cover and cook for 3-4 hours on high, or 5-6 hours on low. Do not uncover while cooking.
When done, remove the lid. Taste and adjust the seasoning, as necessary. Season with salt, or add some paprika, or Lawry's seasoned salt, and red pepper flakes.
- Adjust the slow cooker lid during the last hour of cooking to control the desired level of moisture in the dish.
- Prepare the ingredients the night before, storing them in the refrigerator, for a quick morning assembly before starting the slow cooker.
