Hummus Crudite Cups

These Hummus Crudité Cups are served in little glass cups layered with rich, garlicky hummus and surrounded by crisp, colorful veggies.

Ingredients

  • 15 ounce canned chickpeas
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons tahini
  • 2 tablespoons water
  • 1/2 teaspoon ground cumin
  • 1 small clove garlic
  • Assortment of crudités: baby carrots, radishes, bell peppers, cucumber spears, green beans, asparagus stalks, celery sticks

Instructions

  • In a blender, combine the chickpeas, olive oil, lemon juice, tahini, water, cumin, and garlic. Blend until smooth.
  • Spoon some of the hummus into each glass.
  • Fill with assorted crudités.
