Honey Sriracha Roasted Potatoes

These honey sriracha roasted potatoes are crispy on the outside, fluffy on the inside, and coated with a spicy, sweet sauce that's irresistible.

Ingredients

  • 1 pound potatoes baby or russet, cubed
  • 1/2 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the sauce

  • 1/4 cup sriracha
  • 3 tablespoons honey
  • 1 tablespoon salted butter
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon lemon juice

Instructions

  • Preheat oven to 400° F (204° C).
  • Cube the potatoes into about 1" pieces.
  • Add potatoes to a bowl. Add the olive oil, salt and pepper. Toss to evenly coat the potatoes.
  • Pour potatoes into an oven safe baking dish. Cover with foil.
  • Roast potatoes in the oven for 50-60 minutes, or until potatoes can easily be pierced through with a fork. If you want crispier potatoes, you can remove the foil after 30 minutes to allow the potatoes to brown.
  • Remove the dish from the oven, pour in honey sriracha sauce and stir to coat all potatoes. Return to the oven for 5 more minutes. Serve.
