Ingredients

  • 1/4 cup extra virgin olive oil high-quality
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup fresh cilantro or parsley
  • 2 tablespoons fresh dill
  • 1/4 cup pomegranate seeds
  • 8 ounces fresh goat cheese
  • For serving: Crostini cucumber slices, cherry tomatoes

Instructions

  • In a food processor or stick blender attachment, pulse together olive oil, lemon juice and zest, cilantro, and dill until just roughly chopped (don’t puree).
  • Form the goat cheese into the shape of a tree on a serving platter.
  • Pour the herb mixture over the top of the tree to coat. Sprinkle on the pomegranate seeds.
  • Serve with crostini and vegetables for dipping.

Notes

  • If you have a large tree cookie cutter or mold, you can use that as a guide when forming the tree.
  • Don't puree the herb mixture too fine. You want there to be some definition left to look like pine needles.
  • You can use any combination of herbs that you like. Customize it to your taste.
