- 1/4 cup extra virgin olive oil high-quality
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/4 cup fresh cilantro or parsley
- 2 tablespoons fresh dill
- 1/4 cup pomegranate seeds
- 8 ounces fresh goat cheese
- For serving: Crostini cucumber slices, cherry tomatoes
In a food processor or stick blender attachment, pulse together olive oil, lemon juice and zest, cilantro, and dill until just roughly chopped (don’t puree).
Form the goat cheese into the shape of a tree on a serving platter.
Pour the herb mixture over the top of the tree to coat. Sprinkle on the pomegranate seeds.
Serve with crostini and vegetables for dipping.
- If you have a large tree cookie cutter or mold, you can use that as a guide when forming the tree.
- Don't puree the herb mixture too fine. You want there to be some definition left to look like pine needles.
- You can use any combination of herbs that you like. Customize it to your taste.
