Ingredients

  • 1 1/2 pounds Russet potatoes peeled and cubed
  • 3 teaspoons salt divided
  • 3 tablespoons butter
  • 1/2 teaspoon ground black pepper
  • 1 clove garlic
  • 1/4 cup parsley chopped
  • 1/4 cup mixed green herbs like basil, cilantro, tarragon
  • 2 tablespoons chives chopped
  • 1-2 jalapenos seeds removed (optional)
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/4 teaspoon green food coloring gel if desired

Instructions

  • Place a large pot filled with water on the stovetop over medium high heat. Add the potatoes to the pot, along with 2 teaspoons of salt. Bring to a boil. Lower the heat to medium and continue cooking until tender, about 10 minutes.
  • Drain the potatoes and put them back in the pot.
  • Mash the potatoes to your liking, using your preferred method. Add the butter, remaining salt and pepper. Stir until well combined.
  • In a blender, combine the garlic, parsley, herbs, chives, jalapenos (if using), sour cream, and milk. Blend until smooth. If desired, add food coloring until your desired color is achieved.
  • Stir the green mixture into the potatoes until well combined.
  • Serve with additional herbs as garnish.

Notes

  • If you are looking for a vibrant green color that your herbs don't quite achieve, add a drop or two of green food coloring to the mix.
  • For the smoothest mashed potatoes, use a potato ricer or food mill before adding the herb mixture.
  • The great thing about this recipe is that you can mix and match green herbs according to what you like. Try different flavor combinations for a slightly different taste every time.
