For the crust:
- 1 roll refrigerated sugar cookie dough 16 to 18 ounces
- 1 tablespoon flour for pressing dough
For the frosting layer:
- 8 ounces cream cheese softened
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
For the topping:
- 1/2 cup sliced strawberries
- 1/2 cup blueberries
- 1 kiwi peeled and sliced
- 1/2 cup mandarin oranges or raspberries
- 1 tablespoon honey optional, for brushing
Preheat oven to 350 degrees. Line a 12 inch pizza pan or baking sheet with parchment paper.
Press the sugar cookie dough evenly into a large circle about 1/4 inch thick. Lightly flour your hands if needed to prevent sticking.
Bake for 12 to 15 minutes, or until the edges are lightly golden. The center should be set but not overly browned. Let the crust cool completely.
In a mixing bowl, beat the softened cream cheese, sugar, and vanilla until smooth and creamy.

If desired, lightly brush the fruit with honey for a subtle shine.
