Ingredients

For the crust:

  • 1 roll refrigerated sugar cookie dough 16 to 18 ounces
  • 1 tablespoon flour for pressing dough

For the frosting layer:

  • 8 ounces cream cheese softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

For the topping:

  • 1/2 cup sliced strawberries
  • 1/2 cup blueberries
  • 1 kiwi peeled and sliced
  • 1/2 cup mandarin oranges or raspberries
  • 1 tablespoon honey optional, for brushing

Instructions

  • Preheat oven to 350 degrees. Line a 12 inch pizza pan or baking sheet with parchment paper.
  • Press the sugar cookie dough evenly into a large circle about 1/4 inch thick. Lightly flour your hands if needed to prevent sticking.
  • Bake for 12 to 15 minutes, or until the edges are lightly golden. The center should be set but not overly browned. Let the crust cool completely.
  • In a mixing bowl, beat the softened cream cheese, sugar, and vanilla until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled cookie crust.
  • Arrange the fruit on top in any pattern you like. Keep it simple or create rows, rings, or sections for a colorful design.
  • If desired, lightly brush the fruit with honey for a subtle shine.
  • Chill for at least 1 hour before slicing and serving.
