Easy Smoked Vegetables

- 1 sweet onion peeled and quartered
- 1 red pepper cleaned and cut into squares
- 2 zucchinis sliced thick
- 1 cup Brussels sprouts trimmed and cut in half
- 1 cup mushrooms halved
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preheat your smoker on the Smoke setting.
Place all of the cut vegetables in a mixing bowl.
Mix together the olive oil, Worcestershire sauce, salt and pepper in a bowl until well combined. Pour it over the vegetables and toss to coat. Transfer the veggies to a grill-safe tray.
Place the tray on the smoker and smoke for 15 minutes on the smoke setting. Then turn it up to 225°F for 30 minutes.
- Clean and wash the vegetables. Remove any parts that are inedible, and cut them into similarly sized pieces so they cook about the same.
- It's best to put the vegetables into a grill pan or make a tinfoil tray for them. You won't be able to put them directly onto the grill.
- Alternatively, if you don't have a smoker, you can put the vegetables on a gas or charcoal grill for about 10 minutes at medium heat, stirring them once or twice during cooking. You can also bake them at 375 °F in the oven for 25-30 minutes.
