- 1 cup apples chopped (Honeycrisp or Fuji work great)
- 1/2 cup chicken breast cooked shredded
- 1/2 cup celery chopped
- 1/2 cup seedless red or green grapes halved
- 1/4 cup walnuts toasted and roughly chopped
For the dressing:
- 1/4 cup mayonnaise
- 2 tablespoons plain Greek yogurt
- 1/2 tablespoon fresh lemon juice
- 1/2 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Place the apples, chicken, celery, grapes, and walnuts in a large mixing bowl.
In a small jar or bowl, combine the mayonnaise, Greek yogurt, lemon juice, honey, salt, and black pepper. Mix until smooth and creamy. Taste and adjust seasoning if needed.
Pour the dressing over the salad ingredients.
Gently fold everything together with a spoon or spatula until evenly coated.
