Cinnamon Apple Bread

Ingredients

  • 3 small Granny Smith apples peeled and finely chopped
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup butter softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk

For the icing

  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons heavy cream

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan. Line with parchment paper.
  • Mix together the brown sugar and cinnamon in a small bowl and set aside.
  • Combine the butter and sugar in a bowl and beat with a hand mixer until smooth. Add the eggs and vanilla and continue to beat until combined.
  • Add the flour, baking powder and milk to the bowl and beat on low until a batter forms.
  • Pour a third of the batter into the pan. Cover with 1/3 of the cinnamon sugar and 1/3 of the apple pieces. Repeat this with 2 more layers.
  • Using a chopstick or butter knife, run swirls along the length of the pan. Don’t stir.
  • Put the pan in the oven and cook for 45 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the bread for about 10 minutes before pulling the parchment paper out and allowing the bread to rest on a cooling rack.
  • To make the icing, combine powdered sugar, vanilla and cream in a small bowl. Whisk together until smooth. Pour over the bread as it’s cooling so it melts and drizzles down the sides.

Notes

  • It is a good idea in baking, to let all of your ingredients come up to room temperature before using. Set them out on the counter for 30 minutes before you begin . Eggs and butter are the main items. By doing this you ensure your batter will mix together easier. Creaming room temperature butter and sugar together leads to lighter and fluffier batter.
  • Granny Smith apples are perfect for baking because of their firm texture while baking but you can use any apple really. Try mixing half Granny Smith apples and half of another kind to change the texture and flavor of your bread.
  • Try not to overmix the batter. That leads to dense, stogy bread because you have mixed all of the air out of it.
