For the salad:
- 4 cups cabbage shredded
- 1 red bell pepper thinly sliced
- 2 carrots shredded
- handful of cilantro
- sesame seeds and lime slices garnish
For the dressing:
- 3 tablespoons tahini
- 2 tablespoons rice vinegar
- 2 teaspoons toasted sesame oil
- 2 tablespoon low sodium soy sauce
- 2 teaspoons fresh ginger grated
- 1/4 cup Extra virgin olive oil
- 1-2 tablespoons water
In a bowl mix together the cabbage, red bell peppers, carrots, and cilantro. Stir to combine.
Mix all the ingredients in a jar large enough to fit an immersion blender.
Blend ingredients until they’re fully incorporated and broken down. You might need to add more water to get the right pouring consistency.
Pour dressing over salad and garnish with sesame seeds and lime wedges.
