Ingredients

For the salad:

  • 4 cups cabbage shredded
  • 1 red bell pepper thinly sliced
  • 2 carrots shredded
  • handful of cilantro
  • sesame seeds and lime slices garnish

For the dressing:

  • 3 tablespoons tahini
  • 2 tablespoons rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoon low sodium soy sauce
  • 2 teaspoons fresh ginger grated
  • 1/4 cup Extra virgin olive oil
  • 1-2 tablespoons water

Instructions

  • In a bowl mix together the cabbage, red bell peppers, carrots, and cilantro. Stir to combine.
  • Mix all the ingredients in a jar large enough to fit an immersion blender.
  • Blend ingredients until they’re fully incorporated and broken down. You might need to add more water to get the right pouring consistency.
  • Pour dressing over salad and garnish with sesame seeds and lime wedges.
