Burrata with Roasted Tomatoes

Roasting the tomatoes brings out their natural sweetness, which balances beautifully with the soft, creamy center of the burrata.

Ingredients

  • 1 tablespoon olive oil plus more for drizzling
  • 1 pint cherry tomatoes
  • Salt and pepper
  • 2 balls burrata cheese
  • Flake salt for garnish
  • 1 handful fresh basil leaves
  • 1 baguette sliced and toasted

Instructions

  • In a skillet over medium heat, add the olive oil. Once hot, add the tomatoes and cook until the tomatoes have burst. Season with salt and pepper.
  • Arrange the burrata on a serving plate. I like to cut it open and spread it out a bit.
  • Arrange the tomatoes on top of the burrata.
  • Drizzle with olive oil. Garnish with flake salt and basil leaves. Serve with toasted baguette.
