For the glaze:
- 2/3 cup brown sugar
- 1/4 cup orange or pineapple juice
- 2 tablespoons Dijon mustard
Preheat the oven to 325°F(165°C).
Bake the ham, covered with foil, for 12-15 minutes per pound.
When there are 20 minutes remaining, glaze the ham by brushing it with the sauce using a pastry brush. Return it to the oven, uncovered for the final 20 minutes.
I like to take it out at 135°F(55°C) so it doesn’t overcook. Carryover cooking will bring it up to 140°F(60°C).
- Allow the spiral ham to come to room temperature for about 30 minutes before baking to ensure even cooking throughout.
- If your ham doesn't come pre-scored, make shallow cuts in a diamond pattern on the fat side. This helps the glaze penetrate and gives the ham an appealing look.
- Allow the ham to rest for at least 10 minutes before carving. This keeps the juices retained, ensuring each slice is juicy and flavorful.
