Ingredients

  • 12 tortillas flour and/or corn
  • 1 lb chicken breasts cubed
  • 2 tbsp taco seasoning
  • 1 can black beans
  • 1 can corn
  • 1 can refried beans
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1/2 red onion chopped
  • 1/2 cup sour cream
  • 1 cup lettuce shredded
  • 2 avocados sliced
  • 2 jalapenos sliced
  • 1/2 cup sliced olives
  • 1/2 cup cilantro chopped

Instructions

  • Add chicken to frying pan over medium heat and cook until browned. Add the taco seasoning and stir to coat the chicken. Transfer to a serving bowl.
  • Heat the black beans, corn and refried beans and add to separate serving bowls. Warm the tortillas before adding to the board. All other ingredients can be served cold.

Notes

  • This board will comfortably serve 6 people with no leftovers, which is fine when serving at your dinner table. As a party board, we recommend doubling the portions for 6-8 people.
  • You can use homemade or store bought taco seasoning. If using store bought, follow the instructions on the package.
