Instant Pot Pork Roast
This pork roast is so easy to make in the Instant Pot and it makes a flavorful and hearty main dish that you can pair with any side.
Servings: 6 servings
- 3 lb pork leg or loin
- 1 tsp salt
- 1 tsp pepper
- 1/2 tbsp olive oil
- 1 cup chicken or vegetable broth
- 1 small onion chopped
- 1 ribs of celery chopped
- 1 tbsp fresh rosemary
Sprinkle salt and pepper over the entire roast. Heat the Instant Pot on Saute mode. Add the olive oil to the pot. When shimmering, add the pork roast and brown on both sides (if possible). Remove the roast and turn off the Instant Pot.
Add the broth and whisk any browned bits from the bottom of the pot. Then add the onion and celery to the Instant Pot. Place the trivet into the pot. Place the pork roast on top of the trivet.
Cover the pot, lock on the lid, and make sure the valve is set to sealing. Press the Pressure Cook button and set the cook time to 45 minutes.
When the cooking cycle is finished, allow the pot to depressurize naturally for 10 minutes, then move the valve to venting to release the remaining pressure.
Slice the roast and serve with your favorite side dish.
- A smaller roast will take less time to cook. Cook for 15 minutes per pound.
