Oven-Roasted Tri Tip Steak

– 2 1/2 lb tri tip roast – 1 tbsp salt – 1 tbsp ground pepper – 1 tbsp garlic powder - 1/2 tbsp dried rosemary (optional)

Ingredients

Step 1

Preheat oven to 450 degrees F (230 degrees C). Use a roasting pan with a rack on the bottom.

Step 2

Mix together the salt, pepper, and garlic powder.

Step 3

Rub the roast liberally with the Santa Maria rub. Place meat in the prepared roasting pan.

Step 4

Sear on both sides. Then roast in the preheated oven for 15 minutes. Reduce oven temp to 350° F (175 °C) and continue roasting meat for another 10 minutes, until meat is 125 ° F (for medium rare).

Step 5

Let rest for 10 minutes before thinly slicing against the grain.
