Which Potatoes to Use

Russet potatoes are always great for roasting. They’ll crisp up well and be fluffy in the middle.  If you prefer a creamier middle, try Yukon gold potatoes.

Step 1

The size of the potato pieces have a big impact on the outcome. Chunks of 1 to 2 inches each will provide the best crunch to fluffy potato ratio.

Step 2

Parboil the potatoes in a pot of boiling water, plus 1 tsp salt and 1/2 tsp baking soda, for 5 minutes, to break down the starch. Baking soda helps release the starch into the water, which attaches to the surface of the potatoes and helps them crisp up.
