Summertime, autumn, or anytime really – when you’re craving something quick, flavorful, and perfectly grilled, these Ninja Woodfire Grill Chicken Skewers are perfect.

Infused with an aromatic blend of soy sauce, sesame oil, garlic, and ginger, these skewers offer an incredibly savory taste with just the right amount of char from the grill. The touch of sesame seeds brings a delightful texture, making this recipe a true celebration of flavors and sensations.

To prepare these delectable chicken skewers, you will need:

  • Boneless chicken breasts or thighs – I think chicken thighs are the best option here, but you can even mix and match. The thigh meat will be slightly more juicy because it doesn’t tend to dry out as easily on the grill.
  • Soy Sauce – Use low-sodium for more control over the level of salt in the sauce.
  • Sesame Oil
  • Garlic
  • Ginger
  • Ground Black Pepper – Feel free to adjust the amount of black pepper to suit your preference
  • Sesame Seeds – For garnish

Should You Use the Woodfire Technology?

This is a very fast-cooking recipe. It takes just 5 minutes to cook these chicken skewers on the Woodfire Grill. For that reason, it’s not all that useful to employ the woodfire technology. It will take longer to ignite the pellets than it will to cook the chicken. So I suggest sticking with the grill option without smoke.

If you do choose to use smoke, for chicken, fruit wood pellets like apple or cherry offer a slightly sweet, mild flavor that complements the chicken beautifully without overpowering it. Hickory and mesquite can also work well if you prefer a more robust, smoky flavor.

How to Make Ninja Woodfire Grill Chicken Skewers

Cut the chicken into 1/4” slices.

Mix together the soy sauce, sesame oil, garlic, ginger, and ground black pepper in a bowl or sealable plastic bag.

Place the chicken slices in the bowl or bag, seal it, and marinate in the sauce for 2 hours.

After marination, thread the chicken slices onto skewers.

Preheat the Ninja Woodfire Grill to 400°F, either with or without the woodfire technology.

Once preheated, place the chicken skewers on the grill and cook for 5 minutes, or until the internal temperature of the chicken reaches 165°F.

Remove the skewers from the grill and garnish with sesame seeds before serving.

Tips & Extras

  • Should you have leftovers, which we doubt due to the irresistibility of these skewers, store them in an airtight container in the refrigerator for up to 3 days.
  • It’s best to use 6″ wooden skewers for this recipe. They fit nicely on the grill and won’t scratch the surface of the grill. It’s not necessary to soak the skewers ahead of time because there’s no direct flame.

Frequently Asked Questions

Can I skip the marinade and use a dry rub instead?

Absolutely! While we love the flavor of this marinade, you don’t have to use it. You can use just salt and pepper to season the chicken, or go with a dry rub. Or you can baste on BBQ sauce at the end of cooking.

Can I marinate the chicken longer than 2 hours?

Yes, you can marinate the chicken up to 24 hours. The longer it marinates, the more flavor it will absorb. However, do not exceed 24 hours as the acidity of the marinade can start to change the texture of the chicken.

Can I make these skewers without a Ninja Woodfire Grill?

You can make these skewers on any grill. Just make sure to preheat your grill and cook the chicken until it reaches an internal temperature of 165°F.

Ingredients

  • 1 1/2 pounds (680 g) boneless chicken breasts or thighs
  • 2 tablespoons (30 ml) soy sauce
  • 1 teaspoon (5 ml) sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon (2 g) ginger grated

Instructions

    This is an excellent recipe. Two notes, though. First, five minutes wasn’t long enough for me to have it come to 165. I cut the chicken into 1/4″ slices, but that meant I spread my cuts 1/4″ apart butI left the thigh’s thickness as-is. That seemed to be in keeping with the pictures, but maybe the thighs I bought were much thicker?
    Second, if you’re doing thighs, it’s better to cook them to at least 185; 165 is safe internal temp and any higher than that will dry out breasts, but thighs are dark meat, with a lot of connective tissue. That tissue doesn’t render until you get to the higher temps. America’s Test Kitchen recommends 195F, with a 175 minimum, which, counterintuitively, will make thighs even moister than at 165.
    Note that lower than 165 for breast can also be safe, but the USDA recommendation of 165 is that it’s instantly safe; you’d have to hold the lower temps longer to make it safe, so they’re going with the simpler number.
